Fluffy Buttermilk Biscuits

Things are slowing down around here, and just in time, too.

  • The calves are pretty much all born. The eldest are already weaned!
  • The cows are out in the field, loving life (if you’re a cow and you have a choice between luscious, green grass or silage, you choose the grass every time).
  • The weather is brighter. It was chilly this past week, but for the most part Ireland has thawed out from the bitter winter. My garden is growing, we just got our house power-washed (a preemptive move as the house is getting a lovely new coat of paint very soon) and landscaping plans are in motion. We’re hoping for a warm summer with lots of BBQ’s!
  • I’m slowing things down with my small business, The Siúcra Shack. Spending more time with my kids, getting the house cleaned and organized and baking for fun. Just for now!

This is all because I am totally ready to pop. 38 weeks of pregnancy have flown by, and while I’m thankful for a complication-free pregnancy (and hoping for a complication-free delivery), I am so very ready to not be pregnant anymore.

I’m not being insensitive. I love my babies. I know we’re #soblessed. But three babies in less than four years is a lot for anyone to handle (except for all those women with more kids than me, or moms of multiples, or moms of multiples with other small kids – I’m in awe of those ladies). So, while we are very, very happy, I am also looking forward to a cold beer, getting my body back (in some form), and never being pregnant ever again once we welcome #3 in a few short weeks.

Did someone say biscuits?

So no cold beer for me just yet, but I have been milking these last weeks of pregnancy for all they’re worth. Entire tubs of ice cream? Yes. Massive bowls of creamy pasta? Absolutely.

An entire pan of these flaky, fluffy buttermilk biscuits?

Um… well… Patrick, Ciara and my father-in-law helped devour these, but I’m pretty sure I ate most of them.

They were just so good, you see. Especially with a generous schmear of Tipperary butter and a large dollop of strawberry jam. While still warm.

Actually, I made another pan this morning. I forced myself to give half away, but if Patrick is late coming back from work I can’t promise the remaining biscuits will still be here for his tea.

Since I’ve revisited the way I actually make biscuits, I thought I would share this recipe today. I’ve been making biscuits for a long time. I mean… I have no idea what age I was when I made my first pan of biscuits. I’m from Cape Breton. We literally eat these every day. I never thought I could improve on the recipe I already had in my head, but this “stand mixer/fold” method is getting a lot of online traction so I thought I’d give it a try.

I can tell you, I won’t be going back to rubbing in the butter with my fingers and rolling out once with a rolling pin. You get better flakes, height, texture and an overall fluffier biscuit with this method!

*For the Irish reading (and anyone else who wouldn’t consider this a biscuit), this is more of a scone for you, I know. BUT it’s not as sweet. You can eat these biscuits with savoury or sweet accompaniments. I like biscuits with fish chowder, casseroles. made into breakfast sandwiches and with baked beans as well as with the traditional jam/butter combo!

Fluffy Buttermilk Biscuits

Ingredients:

4 cups/500g (weight) plain flour

2 Tbsp baking powder

1 tsp sea salt

1/4 cup/60g sugar

1/2 cup/110g cold, cubed butter

1 1/2 cups/400ml cold buttermilk

Directions: 

  • Preheat your oven to 200∘C (400∘F) and line a large baking pan with parchment. Set aside.
  • In your stand mixer, add all dry ingredients and, using the paddle attachment, mix to incorporate.
  • Add the cold, cubed butter to the dry ingredients and, continuing to use the paddle attachment, mix on med-low for 5-8 minutes, until the butter is mostly incorporated into the dry mixture (some chunks of butter are ok, but most of it should be mixed into the flour).
  • Add the buttermilk and mix just until everything comes together.
  • On a lightly floured surface, dump the dough out of the mixing bowl. Using your hands and a pastry cutter, start to shape the dough. Fold it in half, flatten out, then fold again and flatten out.
  • Cut out the biscuits and place them on the baking sheet. You can shape/fold the remaining dough and do a second cut, but I would discard the leftover dough after the second cut.
  • Bake 15-20 minutes, or until the tops and bottoms are browned and the bicsuits have risen.
  • Eat the same day, if possible. Even better, eat them hot out of the oven. With tea. And butter and jam.
  • Makes about 14 medium sized biscuits.

Ah, Paddy’s Day.

Those Facebook memories that keep popping up remind me that St. Patrick’s Day isn’t just a fun family holiday. Things just seem to happen for me around this time of year – good things.

Luck of the Irish? Perhaps. Or maybe we’re all just in better moods because the sun tends to come out in March. The trees start to bud, my garden starts to grow, the end of calving season (and; therefore, around-the-clock cow monitoring) is in sight and the air feels significantly warmer.

This time eight years ago, Patrick and I were embarking on a three-month-long backpacking trip around Southeast Asia. Facebook tells me we were in Java, Indonesia. We just climbed Gunung Bromo, a small active volcano, and were en route to Yogyakarta – a city we absolutely loved.

This time four years ago, we were getting ready to leave Toronto for good. I was very excited and a little bit worried. After all, I was nearly six months pregnant and we were both leaving good jobs behind, with no work prospects in Ireland. I loved my work in Toronto but didn’t love living in the city. I couldn’t deal with the prospect of raising my kids so far away from family. Moving to Ireland, as you may have guessed, has worked out brilliantly. We are happy and thriving (and working!).

This time three years ago we were in Portugal on our first-ever family holiday with Maeve. She was seven months old and we had a wonderful time in Lisbon, Porto and Aveiro. The weather was warm and sunny (but not too hot) and we visited with friends I hadn’t seen in years.

And this year? One of my best friends is coming to stay with her 10-month-old baby boy. When they go home, Patrick and I are going to Galway for a few nights to eat, drink and relax sans children. So yeah, March brings good things, and St. Patrick’s Day is just one of them.

I remember Paddy’s Days of the past. In university, in Korea, in (yes!) Yogyakarta and, of course, here in Ireland, I’ve had some crazy times. These days our Paddy’s Day tends to be quieter and more kid-focused. Coffee at a friend’s house, taking the kids to the parade, making green pancakes for breakfast – all of these things are quickly replacing the pub breakfasts and day-long drinking sessions of the past.

Bacon and cabbage is becoming tradition, too. While North Americans gorge themselves on corned beef, the Irish will generally sit down to a family meal of just about anything (Chinese takeaway? I wouldn’t say no). At our house, I usually make a big feed of bacon and cabbage for us and any other family members milling around the farm.

The parsley sauce is entirely optional, but I like it. A lot of people eat their bacon and cabbage with a schmear of English mustard or the ubiquitous brown sauce, but I think it’s more of a complete meal with the parsley sauce (also, it will impress your friends if you want to make this for a Paddy’s Day dinner party). It tastes fancy but is so easy to make.

The dish is called Bacon & Cabbage, but it wouldn’t be the same kind of bacon you have with your scrambled eggs. Here, a loin of ham is called a joint of bacon. You can get them smoked or unsmoked. Just ask your butcher, or, when in doubt, get some uncooked ham. It’s basically the same thing. Bacon and cabbage is usually served with mashed potatoes, but I love boiling new potatoes with the skin-on this time of year.

Whatever you end up doing for Paddy’s Day, I hope it’s great and full of delicious food, drink and loved ones. Sláinte mhath!

Bacon & Cabbage with Parsley Cream Sauce

Ingredients:

Bacon & Cabbage:

1-2 kg ham/bacon joint (cured and uncooked, ask your local butcher!)

1-2 large head savoy or green cabbage

4L chicken stock

1-2 bay leaves

2-3 sprigs fresh thyme

Parsley Sauce:

½ cup butter

1 clove garlic, minced

¾ glass dry white wine

1 cup heavy cream

1 tsp Dijon mustard

1 bunch fresh parsley, finely chopped

Salt and Pepper, to taste

Directions:

  • In a large pot, bring the ham, stock, bay leaves and thyme to a simmer. Simmer the ham/bacon for about 1 hour – or until the ham is cooked through.
  • While the ham is cooking, prep your cabbage: using a large knife, cut out the core and slice the head of cabbage into large wedges. Leave the wedges whole and set aside while the ham cooks.
  • When the ham is cooked, remove the ham, bay leaves and thyme from the pot. Add the cabbage to the remaining broth and cook until tender, about 10 minutes.
  • Make the parsley sauce: in a hot saucepan, add the butter and garlic. Cook for 30 seconds – don’t let the garlic brown. Add the wine and reduce by half, then add the cream. Let the cream boil and thicken for a few minutes – you want the sauce to coat the back of a spoon.
  • When the cream is thickened, add the chopped parsley and season with Dijon, salt and pepper.
  • Slice the ham and add it back into the broth with the cabbage wedges, just to heat through.
  • Depending on the size of your bacon (I usually buy a 1kg joint), this will feed 4-6 people. Serve hot with boiled or mashed potatoes.

#IrelandCooksforSyria: Spiced Chicken Shawarma with Creamy Garlic Sauce; Cream & Rosewater Baklava

Over the past few years, Ireland has been welcoming Syrian refugees to its towns and villages. As a result, there is a good-sized Syrian community now living in Thurles, the nearest town to our farm.

I’m part of a group of Irish Food Bloggers that are posting Syrian recipes today in an effort to introduce you to typical (read: addictively delicious) Syrian cuisine and start a conversation about how we can help welcome refugees into our communities. It doesn’t have to be about fundraising or even necessarily being politically active (though both of those things are great). In my case, I’ve really enjoyed getting to know some Syrian women in Thurles on a more informal level.

Although I was relatively ignorant about Syrian food and culture before writing this post, I did know that most Syrians are practising Sunni Muslims. This means the women wear Hajib when they’re out in public, socialization is largely segregated by sex, and alcohol/pork/non-Halal foods are not consumed – ever. In a small town like Thurles, that can lead to problems when it comes to the weekly shop.

As a result, most Thurles-based Syrian food shopping is done at the Halal shop in Port Laoise or the shops in Tallaght (Dublin) with the last few bits being done in Thurles itself. I was so impressed, when my friend Reham recently had me over to her house, with the size of her refrigerator – it’s a huge, North American-style, stainless steel beauty. I was green with envy.

“We need lots of room because we don’t get to Dublin very often,” she explained. “When we do go, we buy a lot of Halal ingredients and use the fridge/freezer for storage.”

Reham came to Thurles with her husband, son and daughter about two years ago (and she has since welcomed an adorable baby girl!). Her sister came as well, with her own family, but as many Syrian families are quite large the sisters still have siblings, in-laws and parents living in other parts of the world.

Reham and I originally met at a Thurles Women’s Group gathering. I was invited to attend by the local coordinator and didn’t really know what to expect. I ended up staying for hours, having great chats with nearly every woman – Syrian and Irish alike – in the room.

Kids, husbands, the little quirks that come along with moving to Ireland – by the end of the night the ladies and I were laughing like old friends, and Reham promised to make me shawarma – something I used to eat every night in Toronto after cleaning down the restaurant kitchen (the shawarma shop on the way to my apartment was the only restaurant still open at 2am!).

“There is one Halal restaurant (Kebabish) in Thurles,” she said later at her house, in between bites of shawarma and fresh lemon, “but we usually prefer to eat at home.”

I don’t blame her. Reham could make millions selling her homemade pickles and I would be a daily patron if her family ever decided to open a shawarma shop in Thurles.

… Have I mentioned I LOVE SHAWARMA?

In Toronto you can’t walk 500 metres without seeing a shawarma shop. Not all shawarma are created equal, though – the best ones are filled with juicy, spit-roasted slices of chicken or lamb, a generous smear of garlic cream sauce, fresh tomato and pickles and maybe a dollop of hummus for good measure. You can get them in a pita wrap, or with all the ingredients piled on a plate with fries.

Reham doesn’t have a spit (at least, I didn’t see one in the kitchen), but the chicken was moist and deliciously spiced. She wrapped the chicken and sauce in pita and toasted the whole thing on a grill – burrito-style! We then dipped our shawarma in extra garlic sauce and piled them with fried potatoes and bright red pickled turnip.

I was so full after the shawarma, but there was a delicious looking baklava for dessert filled with thickened cream and flavoured with rose water – how could I pass that up? I downed two pieces along with my cardamom-infused Arabic coffee.

I’m so glad to have met my Syrian neighbours in Thurles. They are as mad about food as I am, they’re fun to be around and they teach me new things all the time. As a newcomer myself it’s great to spend some time with other non-Irish people every now and then!

I’d encourage anyone interested in getting to know their local Syrian community to research any local men’s/women’s groups that might be involved. You can also contact your local representatives to ask how you can get stuck in.

Spiced Chicken Shawarma with Creamy Garlic Sauce 

Ingredients:

For the Chicken:

500g chicken breasts or boneless thighs, sliced into large pieces

2-3 pita wraps

juice of 1/2 lemon

1 tsp each:

ground coriander

ground cumin

all-purpose Syrian spice mix (you can find it in Halal shops)

pinch of cinnamon

1-2 cloves garlic, minced

100g plain Greek yogurt

2 tsp salt

For the Garlic Sauce:

5 cloves garlic, roughly chopped

juice of one lemon

1 egg white

2 Tbsp ice water

1 cup rapeseed oil (or canola; sunflower – any mild oil)

good pinch of sea salt

Directions:

  • Marinate your chicken in the spices, garlic, lemon juice and yogurt for at least an hour.
  • Saute or grill your chicken pieces until fully cooked. Open up the pita and spread 1 Tbsp garlic sauce in each. Layer the chicken into the pita and roll up tightly like a burrito.
  • Grill the shawarma wraps until hot all the way through and the outside is slightly toasty. Slice into 2-3 pieces per pita.
  • Serve with French fries, extra garlic sauce, dill pickles, pickled turnip and beetroot, fresh cucumber, fresh carrot, and slices of fresh lemon (you eat the lemon, it’s not for juice!).

Cream, Rosewater and Pistachio Baklava

Ingredients:

at least 16 sheets phyllo pastry (8 for the bottom and 8 for the top)

melted butter (about 60g/1/4 cup)

250g/1 cup crushed or blitzed pistachios

Rose Water Syrup:

2 tsp rose water

juice of 1/2 lemon

1/4 cup water

1/2 cup honey

Cream Filling:

250ml/1 cup heavy cream

250ml/1 cup whole milk

60g/1/4 cup sugar

3 Tbsp cornstarch

2 tsp vanilla

Directions: .

  • Make the rose water syrup: in a small saucepan, combine the lemon juice, water, rose water and honey. Bring to a boil and boil for 2 minutes (until slightly thickened). Set aside to cool.
  • Make the cream filling: in a saucepan, combine all of the ingredients, stirring until smooth. Slowly bring the mixture to a boil, stirring constantly, and boil for 2 minutes to fully thicken. Remove from heat, allow to cool slightly, then wrap clingfilm directly onto the surface of the filling (to avoid a skin forming) and chill for 1 hour.
  • Preheat your oven to 180∘C (350∘F)
  • Line the bottom of a small, lightly buttered casserole dish with half the phyllo pastry, brushing each sheet with melted butter before adding the next. On top of this, add the cream filling and spread evenly.
  • Add the remaining phyllo sheets on top of the cream filling, again brushing each sheet with melted butter (including the top sheet). Using a sharp knife, lightly score the top of the baklava with a diamond or square design.
  • Bake the baklava for about 40 minutes (check after 30). The pastry should be golden brown and puffed-up and the diamond or square design on top should be prominent.
  • Sprinkle the top of the hot baklava with the crushed pistachios and then douse the whole thing in syrup (this must be done as soon as it comes out of the oven). Allow to cool before cutting and serving.
  • You will want to eat this within 2 days (the fresher it is, the better it tastes).

Una O’Dwyer’s Black Pudding & Thyme Sausage Strata

Before we found out I was pregnant with our third child, I was in the best shape of my life.

When we got back to the farm after our 2016 Pan-Atlantic/Cross-Canada Adventure, I took up running. Actually, I took up running while I was home in Nova Scotia. The longer evenings and milder temperatures in June gave me a bit of energy. I started tracking my progress (and my caloric intake) on my smartphone. I started the Couch to 5k app and slowly, ever slowly, went from barely being able to run for a minute at a time to running for 25 minutes straight, without stopping.

I was eating stuff like this pre-pregnancy/pre-strata.

Some runners may scoff at a mere 25 minute run (a jog, really) but for me – as someone who absolutely hated running; who swore she would never, ever be a runner – it was the biggest deal. I never thought I’d be able to do it, but I did.

Then I got pregnant again. And the extreme exhaustion started creeping in, usually around mid-afternoon. And I started letting my three year old watch endless episodes of Paw Patrol so I could nap on the couch while Ciara napped in her room. And I started craving Big Macs every day at 2pm.

Yes, the calorie-counting went out the window, as did my tri-weekly run – even though my doctor told me I’d be fine to continue. It was just a bit too much.

But I miss it. 25 weeks into this pregnancy, I’m excited to meet our new baby and get back into some kind of exercise regime.

But the calorie-counting? I don’t miss that. Especially when I can eat things like this decadent black pudding sausage-laden strata, made with Irish cheese (I used Derg Cheddar – they make their cheese using only raw, summer milk here in Tipperary), without feeling guilty.

Una O’Dwyer (aka The Butcher’s Daughter) makes really great sausages. She has a shop in Cashel, Tipperary – about a 40 minute drive from the farm – and sells a wide range of her sausages nationwide. I made this strata with her black pudding & thyme sausages. The earthy flavour of the black pudding went really well with the creamy farmhouse cheddar.

Oh, and thanks to all that pre-pregnancy running, my BMI went down an entire 3 points and I lost more than 15 pounds. We’ll see what the scales say post-pregnancy, but in the meantime I’m going to have a second helping of strata – with a generous dollop of herby sour cream.

Una O’Dwyer’s Black Pudding & Thyme Sausage Strata

Ingredients:

1 loaf crusty bread, cut into thin slices

1 package Cashel Fine Foods Black Pudding & Thyme Sausages, casings removed

500g button or chestnut mushrooms, sliced

1 large onion, diced

500g cherry tomatoes, cut in half

250g/1 cup aged cheddar cheese (I used raw Derg Cheddar), grated

1 Tbsp rapeseed/olive oil

1 Tbsp butter (for greasing)

10 large eggs

200ml/3/4 cup cream

2 tsp Dijon mustard

2 tsp salt

1 tsp black pepper

To Serve:

Chopped, fresh herbs (parsley, thyme or chives)

250g/1 cup sour cream

Directions:

  • Preheat your oven to 400∘F (200°C, no fan). Grease a large casserole dish with 1 Tbsp of butter.
  • Heat a large skillet to medium-high on the stovetop. Add the olive oil, then add the diced onion.
  • Cook the onion for five minutes, or until translucent. Add the mushrooms and sausages and continue to fry until tender and caramelized (about 8-10 minutes). You’ve removed the casings from the sausages, so at this stage you can break up the sausages with a wooden spoon.
  • Take half the sliced bread and layer it evenly on the bottom of the buttered casserole dish. Add the sausage/mushroom/onion mixture over the top, then sprinkle that with half the cheddar cheese.
  • Sprinkle the halved cherry tomatoes over the cheese, then layer the other half of the bread over top.
  • In a bowl, whisk together the eggs, cream, Dijon, salt and pepper. Carefully pour the egg mixture over the casserole, ensuring each area is well-coated. Sprinkle the remaining cheddar over the top.
  • Allow to sit for at least 30 minutes, or up to 24 hours, before baking for 45-55 minutes. If you stick a sharp knife in the strata and some egg oozes out, you’ll know it’s not ready. Cook for another 10-15 minutes.
  • Serve hot with a dollop of sour cream and fresh herbs. This casserole serves 8-12 regular people, or 3-4 pregnant ladies.

Tipperary Lamb + New Potato Curry

Things are going to go a bit crazy in the next few weeks. Someone recently made fun of me and my penchant for list-writing, so I think I’ll go ahead and write this post in list form.

  1. My daughter is going to preschool on the first of September. My daughter. Is school aged. I could have sworn we just brought her back from the hospital. I could have sworn I wasn’t old enough to have a child in school. But there you go. Next week, my baby will be taking her first step toward complete and utter independence from Mama. I’m not sure how I feel about that.
  2. My other baby is going to be minded by someone other than me for a few hours a day while Maeve is in school. I’m not sure how this is going to go either, but I’m happy enough knowing she’s being cared for by a good friend and I will literally be across the street the entire time.
  3. I’m starting a business. I have no capital, no “starting a business” experience and no idea how this is going to go. I’m giving it a shot. I’m giving it a year. If it works, great. If not, I’ll be content in the knowledge that I started off small enough to (hopefully) not lose that much money.
  4. “Janine! You’re starting a business?! What business?”, I hear you asking. Well, readers, maybe I’ll be ready to speak more about it next week or the week after, but since I’m still waiting on a few things I will keep a lid on the details for now.

So yeah. Things are happening. Scary, exciting, crazy things. I hope you tag along with me for the journey.

A good curry always calms me down at the end of the day – especially lamb curry made with delicious Tipperary lamb from Lacey’s Butchers in Thurles and new Irish potatoes. I threw in some spinach to make it look healthier, but honestly – it’s not a bad dish. It’s made with really great ingredients, a little olive oil and lots of spicy TLC (and salt). A bit of basmati rice, a dollop of natural yogurt and a sprinkling of fresh coriander bring it to proper meal status.

Tipperary Lamb + New Potato Curry

Ingredients: 

1 lamb shoulder, deboned and cut into large-ish chunks

500g new potatoes, cut in half or thirds (make them the same size as the lamb chunks)

1 really big onion, or two smaller ones

3 cloves garlic, smashed and finely chopped

1 Tbsp fresh ginger, finely chopped

1 bunch fresh spinach, washed and coarsely chopped

1 tbsp tomato paste

2 tsp garam masala

1 tsp turmeric

1/2 tsp cayenne pepper

1 L (4 cups) hot beef stock

Salt, to taste

Juice of one lemon

Natural yogurt and Fresh Coriander, for serving

Directions:

  • Heat a large dutch oven or any heavy-bottomed, large pot on the stovetop on high. It needs to be smoking hot before you start cooking.
  • When it’s well heated, add 2 Tbsp olive oil, then add the chopped onion. Cook the onion for 5 minutes, stirring frequently to avoid burning. Then add the lamb to brown.
  • When the lamb is browned, add the garlic, ginger and spices. Cook an additional 2-3 minutes, until fragrant (don’t get scared if the bottom of your pot is starting to look brown – that’s all flavour).
  • Add the tomato paste and mix thoroughly through the other ingredients, cooking an additional minute. Then add the hot beef stock. Bring to a boil.
  • Turn the heat down so the curry is at a simmer. Cook until the lamb is slightly tender and the sauce has reduced by half (about an hour), then add the potatoes. (If you need to add more stock at this point, go ahead. Even some hot water is fine if you think the sauce is too thick).
  • Continue to simmer until the potatoes are fork tender, the lamb is completely tender and the sauce coats the back of a spoon. Add the fresh spinach and stir through until wilted.
  • Season to taste using the salt and lemon juice. I like lots of acidity, but some don’t. Just go with your gut.
  • Serve over hot rice or warmed flatbreads, a dollop of yogurt and a sprinkling of fresh coriander.

Visiting Thurles: The Green Sheep Cafe

So back to The Green Sheep. Where do I even begin?

If you’ve ever lived in a foreign country you might have had a brilliant or not-so-brilliant experience. In my opinion, whether or not you have a brilliant experience is dependent on a few things:

  1. Making friends. Real ones. You know, the kind you can complain to and laugh hysterically with.
  2. Having purpose. A job you love, a serious hobby, a volunteer gig – any of these things make you feel like you belong to the community.
  3. Having a place to hang out. The times when you have nothing to do and don’t feel like being alone in your house, you need a place to go. A place where you feel comfortable.

I had these three things when I lived in Korea – a great job, a group of amazing friends (not to mention the Irishman I would someday marry) and Now Bar – the foreigner bar where we’d all congregate in the evenings and on weekends. The bar’s owner – a fun-loving woman we called Mrs. C – was like our Korean mom.

I have these three things in Ireland, too, which is great since I don’t plan on living anywhere else for the rest of my life. Funnily enough, all three of things things include The Green Sheep.

I initially met The Green Sheep’s owner, Lucy Lambe, via Twitter. She kept telling me to visit her in her new cafe, so, eventually, I did. I loved the vibe and the coffee (she uses single origin Baobab coffee – these guys know how to roast beans). I loved Lucy, too. She is absolutely stark raving mad (in the best way). I quickly came to realize how passionate she and her husband, Patrick, are about supporting our local food producers and how much they enjoy showcasing all the great food products made in our area.

So the cafe quickly became my hang-out. I would buy a coffee and watch the people walking down Friar Street. I soon came to know the other regulars and became good friends with Lucy and her family. Lucy would help me find local products to feature in my weekly Tipperary Star food column and I would bake and bring things in for her and her customers to sample. Her kids became my go-to babysitters.

The food served here is whimsical, fresh and as a la minute as you can get (sometimes you don’t even know what you’re going to get – but it’s always good). In the winter you can get warming soups and stews; during the summer the salads are full of edible flowers and herbs from Comfrey Cottage.

They sell cakes, donuts (more on that later!), specialty meats and cheeses (think Toonsbridge, raw Derg Cheddar, Gubbeen and Cooleeney), local Thurles Tarts and jams, chutneys, juices and sauces – all made locally.

They make fresh sandwiches and salads. Lucy’s Wild Irish Shrub Vinaigrette is becoming famous. But most of all, they serve up a vibrant atmosphere, full of good conversation and fun. Customers here quickly become friends. Its proximity to the Thurles train station has brought many a stranded visitor en route to elsewhere. They come in to wait for the next train and leave laughing and waving – instant friends. I’ve witnessed this on more than one occasion.

The Green Sheep is open Monday-Saturday from 8-6. They sometimes open on Sundays if there’s a match at Semple Stadium. The next time you’re in Thurles, stop in for a coffee and lunch – you will leave happy!

Upside-Down Strawberry Rhubarb Cake

I’m back home. In Ireland, I mean. It’s funny, I call Cape Breton “home” and Ireland “home”, but when I talk about Cape Breton being home it’s meant to be past tense. As in, it used to be home and will always and forever more be referred to as home. But, as wonderful as Cape Breton was, and Vancouver, and Victoria, it is so, so good to be back in Tipperary.

And it’s summer. My garden is growing. There are baby animals everywhere (and thanks to my cat, baby animal corpses everywhere, but we won’t go there right now) and, even though it’s often grey and rainy, it’s sometimes warm and sunny. Already much better than last summer, which was mostly cold, windy and rainy.

I’ve been home a little less than a month and I’m already super busy. Making plans, going to playdates, taking little day trips here and there, visiting, baking. The bit I’m most excited about is the plan-making, but I’m not ready to say anything more about it at the moment – just stay tuned!

So yes; I’m super busy. But don’t worry, I always have my two darling children to keep my ego in check. Whether it’s by peeing on the floor (daily) or simply staying up all night long, my kids continually remind me who’s truly in charge of my life (or I guess you could say: what’s truly important in life). I wouldn’t have it any other way, really.

When I came home, my garden was so overgrown with weeds it looked more like a jungle. It took four solid evenings of weed-pulling and seed planting, but my hard work is paying off. Napa Cabbage (for autumn kimchi making!), sprouting broccoli, cauliflower, squash, pumpkin, courgette – you name it, it’s been planted and is currently sprouting. I was late getting a few things planted, but the growing season is longer here than it is in Canada so I’m keeping my fingers crossed for a good harvest.

Two things that were ready when I got home were our strawberries and rhubarb. I’ve never grown strawberries before, but this year Maeve asked if she could plant them. Our old farmhouse is surrounded by very old, black cauldrons (I think they were used for laundry or something back in the day) so we found the biggest one and planted the strawberries there. We left tiny seedlings and came home to a huge, vine-laden bunch of plants just dripping with beautiful berries.

This is a great summer cake to make with whatever fresh fruit or berries you have on hand. I made it with our gorgeous strawberries (of course) and fresh rhubarb, but it would be great with blueberries (with some maple syrup and lemon), peaches, plums or cherries. The cake base is a super-moist hot milk cake recipe that I use all the time – it never, ever fails me.

Strawberry Rhubarb Upside-Down Cake

Ingredients:

For the cake:

1 cup/250g granulated sugar

2 large eggs

1 tsp vanilla

1 cup/250g AP/plain flour

1 tsp baking powder

1/2 tsp salt

1/2 cup/125ml scalded milk

3 Tbsp butter (melted into the hot milk)

For the topping:

1 punnet strawberries – hulled and cut in half

3-4 stalks rhubarb, chopped

1/2 cup/125g brown sugar

1/4 cup/60g butter

Directions:

  • Preheat the oven to 350∘F (190∘C, no fan). Grease a round springform pan and place the pan on a lined cookie sheet (in case it leaks) set aside.
  • In a small saucepan, combine the butter and brown sugar for the topping. Bring to a boil and remove from heat.Pour the mixture into the bottom of the pan and arrange the strawberries and rhubarb over the top. Set the pan aside again and make the cake batter.
  • To make the cake: whisk the eggs, vanilla and sugar until pale yellow in colour and nearly doubled in volume (this is known as the ribbon stage – the mixture should drip off the whisk in ribbons).
  • Add the flour, baking powder and salt to the mixture and stir until just combined. Add the hot milk all at once and, again, stir until just combined and there aren’t any lumps in the batter.
  • Gently pour the cake batter over the strawberries and rhubarb in the springform pan.
  • Bake in the preheated oven for 30-35 minutes (if you have an extra-hot oven start checking your cake at 25 minutes). A skewer inserted in the centre of the cake should come out clean.
  • When the cake is ready, allow to set in the pan for 15-20 minutes, then run a knife around the edges and gently remove from the pan. Flip the cake onto a plate and gently lift the bottom of the springform pan. Voila! You should have a perfect upside-down cake.
